Tahini Soy Dressing

Ingredients

  • ⅓ cup water

  • 3 Tbsp tamari or gluten-free soy sauce

  • 2 Tbsp apple cider vinegar

  • 3 Tbsp tahini

  • 2 Tbsp nutritional yeast

  • 1–2 cloves garlic

  • 1–2 tsp sriracha

  • ¼ tsp black pepper

  • 1–2 Tbsp canola oil

Method

  1. Add the water, tamari, apple cider vinegar, tahini, nutritional yeast, garlic, sriracha, and black pepper to a blender or Cuisinart.

  2. Blend until completely smooth.

  3. With the blender running, slowly drizzle in the canola oil.

  4. Blend for another 10–15 seconds, until creamy and emulsified.

  5. Taste and adjust:

    • Add more water if too thick.

    • Add more vinegar if it tastes heavy.

    • Add more tamari if it needs salt.

    • Add more sriracha for heat.

Notes

For a very low-oil version, use 1 Tbsp oil. For a richer version, use 2 Tbsp oil.
